Qua groentesoorten en pastasoort kun je zeker variëren. Er is niet één vast recept voor minestronesoep. In Italië verschilt het heel erg per regio wat erin zit. Verder moeten er zeker Italiaanse kruiden in. En nog minimaal 3 andere soorten groenten. Anders wordt die soep natuurlijk nooit goed gevuld. Vaak wordt er ook nog pasta toegevoegd aan de soep. Zeker als je er een Italiaanse maaltijdsoep van wil maken, vind ik dat ook erg lekker. Dus die zitten er in dit minestrone recept ook in!
